  • 1 medium zucchini, sliced
  • 4 scallions, cut into 2-inch pieces
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tbsp honey
  • 1 tbsp fresh lemon juice

Instructions

  1. Prepare the marinade by whisking together miso paste, soy sauce, honey, sesame oil, and lemon juice in a bowl until smooth.
  2. Cut salmon into bite-sized pieces and toss in the marinade; let it sit for at least 15 minutes while you prep the vegetables.
